Mark’s seasoned expertise will guide you in the preparation of two essential egg dishes and one zesty surprise: a brunch-ready mocktail with egg whites as the secret ingredient. You’ll discover how to avoid common pitfalls and elevate this one simple ingredient with precision cooking methods, flavor combinations, and techniques that only the pros know.

  • Learn how to poach eggs to perfection (the secret to brunch favorites like eggs Benedict) and discover why Mark’s hard-poaching technique beats hard-boiling for frustration-free results.
  • Make two classic omelets (one cheese, one filled) as you learn the secrets of prepping fillings for even cooking, temperature control, and timing finesse to prevent over-browning. With over 30 years of experience at restaurants and hotels across the country, Chef Mark Kalix has abundant culinary knowledge to share. So it isn't surprising that he's added teaching to his long resumé. The Ohio native, who now calls Denver, Colorado home, focuses on having fun in the kitchen and using fresh ingredients prepared with skilled techniques to bring out their best flavor. When Mark isn't in the kitchen, you'll find him mountain biking, skiing, climbing and enjoying the great outdoors with friends and family.

For this class, you'll need a whisk, a medium bowl, some small bowls, a cocktail shaker, a collins glass (or glassware of choice), a citrus juicer, ice, an 8 inch nonstick pan, a rubber spatula, a large pot, a slotted spoon, medium plates, a large chef knife, a cutting board, a cheese grater and the ingredients listed in the link below (hint: you'll need eggs!)

Notes

Before class, please:
- 1 hour before, pull 1 dozen eggs out of your refrigerator to bring them to room temperature.
- 20 minutes before, wash and dry produce.
- 5 minutes before, fill large pot with water and heat to gentle simmer.

1-2 people per screen, please. (More than that affects the quality of everyone's experience.)
