The Experience

You’ll taste three flavors of heirloom chocolate, explore each one's ancient lineage, and discover the fascinating, tree-to-bar artistry that goes into their making.

  • Venecia will guide you through sampling luxurious chocolate handcrafted in Ecuador from a native variety of cacao bean that’s more than 5,000 years old—a descendant of the first cacao trees to be cultivated in human history.
  • The chocolate you’ll be tasting has been aged in the original wooden casks used to produce mezcal, gin, and rum, infusing the bars with the subtle essence of each spirit.
  • Identify the unique flavor profiles of these sumptuous sweets as you learn how the beans are sustainably grown in the mountainous Andean rain forest, then skillfully transformed into dark, silky decadence.
  • Feel free to bring a liquor, dessert wine, or soft cheese to enjoy with your chocolate—you’ll find pairing recommendations in the kit that comes with the class (see below).

In the cacao farms of Ecuador's Piedra de Plata valley, the farmers call Venecia Quezada "sobrina," Spanish for niece. "They always have roasted cacao beans to share with me during our walk around the farms," she says. Relationships like these, paired with a dedication to craftsmanship and conservation, have made Venecia's chocolate career, in her own words, "a rich journey, and a sweet one as well!" When she isn't visiting the farms, you'll find the native of Santo Domingo, Ecuador, eight hours away in the capital of Quito, where she leads customer experiences for one of the country's most celebrated producers of single-origin, heirloom chocolate. "Our ancient Nacional cacao is the ultimate star," she says. "I love the idea of chocolate being a path to educate others about a better way of living and taking care of nature."

- Do not store chocolate in fridge or freezer, please look for a dark, dry area between 56-74°F
- Try not to eat food with a strong aroma or flavor for at least 2 hours before class (e.g garlic, hot sauce, etc.)
